Rosemary's Autumn Muffins

INGREDIENTS
1 1/2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 baking soda
1 cup low fat cottage cheese
1 granny smith apple finely chopped
1/2 cup firmly packed brown sugar
1/4 cup oil
1 egg
1 tsp. vanilla

DIRECTIONS
Mix flour, baking powder, salt. cinnamon,baking soda together & set aside.

Mix remaining ingredients in amedium bowl and the add flour mixture, stir
until smooth.

Spoon into greases or paper line muffin pan. Fill each cup 2/3 full. Bake
@ 400 for 25 minutes or until brown.

Apple Crisp

6 large Granny Smith apples
10 graham cracker squares (2&1/2 in. each)
1 & ½ cups packed brown sugar
1 cup oatmeal
1 cup flour
2 tsp. cinnamon
1 tsp. nutmeg
1 cup butter or margarine, melted

Preheat oven to 400 degrees. Peel, core & slice apples. Prepare enough to
fill deep dish baker/rectangular pan ¾ full. Finely chop graham crackers.
Combine crumbs, brown sugar, oats, flour & spices. Add melted butter; mix
well. Spoon mixture over apple slices. Bake 20-25 minutes or until apples
are tender. Serve warm with whipped cream or ice cream. Enjoy!
